Dairy Free Veggie Queso

This Veggie Queso looks, smells and tastes pretty close to the real deal BUT without the dairy and it’s loaded with veggies!!!

You can eat this all day, every day… guilt free. Yes please!

I always have been and always will be a big fan of Mexican food. When I gave up dairy in 2013, queso was by far the hardest thing to part with. Over the past few years, I have tried many different recipes, tweaked, added and removed ingredients… This version is one I can’t stop eating.

This recipe makes a large batch because it freezes so well. To freeze, let cool and pour into glass jars or Super Cubes then freeze. When you reheat, the ingredients do separate a little. Don’t worry, simply warm on the stovetop and blend with an immersion blender. You will be good to go.

I love this veggie queso as a dip with plantain chips or Siete Grain Free Tortilla Dip Chips plus more!

Ideas:

  • Add ground taco meet on top for what we call Jose’s Dip here in Houston

  • Drizzle on your favorite tacos or nachos

  • Omit the salsa from the recipe and use it to make mac-n-cheese

Honestly, I love this so much that I double the recipe below when I make it. Like I said, it freezes well so while I am making it, I might as well make a lot… ha!
