Oven Roasted Chicken

Ingredients

1 whole chicken (ideally pasture raised, if not, then organic)

Seasoning of choice

1-2 tbsp of avocado oil or olive oil 

Instructions
Season the chicken liberally. Ideally you want to do this the day before you cook it or at least earlier in the day and keep it covered in the fridge. If you don’t have time to do it beforehand, add extra seasoning or buy Trader Joe’s Brined Organic Chicken (if doing this, don't add salt).

Preheat the oven to 475. Put oil on the bottom of a baking dish and place chicken on top. Put the chicken in the hot oven for 20 min. This gets the skin nice and crispy. After 20 min, turn the oven to 350 and cook for another 1 ½ hours. You now it is done when you can pierce the chicken with the tip of a knife and the juices run clear.

Pull the chicken out of the oven and let it sit for about 10 min before cutting. Slice and enjoy! Note: Save the carcass in the freezer to make bone broth another day.
