How to begin clean eating…

Clean eating isn’t just about eliminating toxins and harmful chemicals from our foods and beverages; it’s also about getting back to the basics… true wholesome foods that do our bodies good! This has been something that I began learning about in 2009 and continue to learn more with time.




It all started when…

Avocado and Tomato Salad


Family Favorite

My brother is in town from Alaska so my mom made one of his favorite meals... brisket and beans! I don’t have her recipe for these because this isn’t something I really cook (although it’s really good) but I do make her salad a lot, especially in the summer. It’s super easy and very refreshing!

Tomato and Avocado Salad:
Lettuce (bib or butter are my favorites)
Tomato - sliced
Avocado - sliced
Scallions (optional)

Arrange lettuce leaves along the bottom of a plate or platter (if making for a large number of people). Place tomato slices on top of the lettuce. Place avocado slices on top of the tomatoes. Squeeze lime juice all over the top (the amount will depend on taste but I say the more the better). Sprinkle with Salt and Pepper and optional chopped scallions... enjoy!
Tip: You can make this an hour or so in advance or just before serving. The lime juice will keep the avocado from browning.


Mexican Shredded Chicken


Kid Favorite

This is one of the kids favorite and probably one of the easiest meals I make! I had mine with roast sweet potatoes and guacamole. The boys had it with rice with peas and carrots. Only 3 ingredients and can be cooked in either a Crockpot or Instant Pot.

Skinless boneless chicken breast (I usually use between 4 and 6)
Taco seasoning (you can make your own but I like this one from @wholefoods)
2-3 cups of Salsa


Either method of cooking... put the chicken in the bottom and cover with taco seasoning and then cover with salsa. When it’s done cooking, shred the chicken in the pot and let it soak up the juices!

Crockpot - Cook on low for 8 hours

Instant Pot - I used 6 partially frozen chicken breasts and set it on Poultry and ended up cooking it for 25 min. If they were thawed, I think 15 min would have been fine (I haven’t done this as I usually use my Crockpot for this).

Tips: if buying taco seasoning, look for one that does not have sugar in it (most do). I know it’s easy to make your own taco seasoning but I prefer just to buy it.
Note: we also make tacos or quesadillas with the chicken but I didn’t have any and didn’t want to make them. .
