Deviled Eggs are not just for Easter and Bridal/Baby Showers…these are a staple in our house and enjoyed anytime all the time! The kids can grab these healthy bites anytime they want - for a snack, quick breakfast, lunch… oh the list goes on.

Eggs are a great source of protein and full of nutrients your body needs, especially if you get pasture raised eggs! Have you heard that egg yolks raise your cholesterol? Well, they actually help raise good cholesterol, HDL, which can help lower the risk of heart disease. We can all use more of that!

This recipe is for a basic yet healthy, dairy free Deviled Egg that my kids eat on the regular. You can make your own Homemade Mayo or keep it easy and use Primal Kitchen Avocado Mayo. If you want to jazz it up, simply add a topping before serving:

  • a dash of paprika

  • smoked salmon

  • crumbled or chopped bacon

  • candied jalapeno

So many possibilities... Do you add a topping or keep it simple?

Instructions

  1. Cut hardboiled eggs lengthwise. Scoop out the yellow yolks and place them in a small bowl. Place the egg whites on a plate.
  2. Use a fork to mash the egg yolks. Add the remaining ingredients and mix well. Add salt to taste.
  3. Spoon yolk mixture into the egg whites. 
  4. Keep in the refrigerator in an airtight container until ready to serve.
  5. When ready to serve, sprinkle or add any additional toppings on top.
  6. Enjoy!
